幾個月前在IG上滑到這篇要介紹的 惜拾餐飲工作室 KYOSip Studio 時, 對於當時五道餐點只要NT$680 留下極深的印象, 但因為位處安南區, 不是蓋瑞和吃友會活動出沒的地區, 就這樣放在口袋名單中沒多久之後, 店家已將價格調升到NT%980。心想要是再不趕快安排來踩點嚐鮮, 說不定再過不久價格會再變動, 便速速傳Line跟店家預約好於今晚前來享用。
目前店家只接受用Line預約, 建議想要加店家Line帳號的人用手機直接掃描底下的QR CODE, 店家在IG所提供的Line帳號似乎是無效的。加賴預約成功後必需要在三日內匯全額款項才表示是真的預約成功哦。另外也可以用台灣pay付款。
底下是今晚的菜單。店家似乎每隔幾個月會更動一次菜色, 之後也計劃在平常日晚餐推出單點制, 可以期待一下。
臘肉楓糖司康
將臘肉切成細塊加入司康之中, 司康表層刷上楓糖醬烤到金黃酥脆, 另外再附上以Ricotta cheese生乳酪結合店家自己醃漬了兩年的鹹檸檬製作而成的乳酪醬, 非常特殊及有特色的組合。臘肉塊結合司康的奶香及麵粉香意外地合拍, 再沾上生乳酪醬則有另一層不同的風味, 偶爾跳出來的鹹檸檬味道讓整體吃起來驚喜又不無聊。個人希望乳酪醬可以再給得大氣一點, 不夠沾啊。

季節水果冷湯
這應該是蓋瑞第一次喝到”冷”的湯品, 或許因為這樣, 加上店家使用的食材及料理方式, 讓蓋瑞覺得這道冷湯是今晚五道菜色之中最最最讓人驚艷喜歡的。冷湯的基底是使用台灣產的甘露梨製作, 喝起來甜甜鹹鹹再帶有沙沙的口感; 中間切小小顆正方形的一樣是使用台灣產的青龍蘋果; 最上面則有切細絲的紫蘇葉以及點綴在冷湯上面的紫蘇油; 切對半的紫葡萄有著醃漬過後的酸味; 最後再灑上烤過的堅果碎(應該是杏仁)。老闆建議要吃之前先將全部的食材拌勻後再享用, 不得不說, 紫蘇葉以及烤過的堅果在裡面完全起到了畫龍點睛, 錦上添花的作用, 讓這碗冷湯的層次又再提高了好幾層, 味道也極為豐富, 好喝死了。

小卷時蔬義麵
新鮮的小卷將內臟挖出, 中間加入了糯米椒一起烤到適當的熟度, 嚐起來鮮嫩Q彈, 且今晚的小卷還有帶卵, 老闆有特別挖了一些出來灑在義大利麵之上, 另一部份則保留在小卷之中, 可以一次吃到小卷+糯米椒+小卷卵; 而挖出的小卷內臟則與米型的義大利麵一起拌煮, 裡面還加入了切小塊的菱角, 雨來菇, 讓口感及味道更豐富; 而盤底黃色醬料則為奶油南瓜泥, 不管是沾小卷或是與黑色的義大利麵一起混搭著吃, 都很讚, 尤其是黑色義大利麵的調味吃到面會覺得稍微偏鹹了一點點, 就更需要奶油南瓜泥的救援, 是一道還滿不賴及好吃的義大利麵, 而且一樣在品嚐的過程之中一點都不會覺得無聊。不過在黑色墨魚醬的米型義麵之中偶爾會吃到小卷的”透明骨骼”小碎片, 雖然是可食用, 但還是會稍稍影響到食用過程的口感和體驗啊。

法式磨菇雞捲
思考很久要如何介紹這一道, 畢竟金魚腦的蓋瑞記不太住戴著口罩的老闆介紹詞啊, 只能憑薄弱的記憶以及實際食用的觀察及心得盡量用文字呈現出來。這應該是一道將原食材拆解, 再與異食材結合, 以及再組裝的餐點。半圓柱狀的雞捲中間應該是將雞肉攪碎後再混入雞肉絲菇後再回填至雞捲之中, 雞捲底下灰色醬蘑菇鮮奶醬, 可以沾雞捲也可以用隨餐附上的奶油捲沾來吃, 都很不錯。而餐點上桌之後, 老闆還會來到桌邊將芥茉子醬淋在雞捲之上, 並交待一定要趁熱快點享用。
另外, 在盤中的幾樣蔬菜也都有稱職地扮演好配角。白色的美白菇只取用菇蓋的部份浸漬在醋酸液之中, 嚐起來酸度頗高但不會太過刺激, 菇蓋吃起來是QQ脆脆的; 紫高麗菜也是有浸漬過並帶著微微的酒味; 奶油白菜應該是只有水煮燙過, 吃起來相當清脆。另外, 不得不特別讚賞隨餐附上的奶油捲麵包, 表層極度酥脆, 質地和越式的法國麵包頗為類似, 但較為濕潤及有彈性一點, 好吃死了。

最後一道甜點是檸檬乳酪蛋糕, 並且也一併送上了一杯用多種香草植物沖泡的熱茶。吃完前面四道餐點, 老實說, 蓋瑞真的覺得滿飽的, 所以最後送上的熱茶來得很是時候, 且甜點的份量雖然看起來小小一片, 但做為這一整個餐期最後的點綴及收尾, 蓋瑞覺得份量剛剛好。起士蛋糕的味道大概在輕到中乳酪之間, 濃郁適中, 而加在蛋糕中間的是一般會用在檸檬塔上面的檸檬塔醬, 酸度不會太高, 在品嚐的過程之中偶爾再搭配旁邊的咖啡粉以及甘蔗糖還有紅香橙柳丁, 整體吃起來不無聊也不錯吃。
